Braised Beef Short Ribs with Root Vegetables and Mushrooms

Description:  This recipe for braised beef short ribs makes the most of the flavor of beef with 3 different potatoes and mushrooms.

Ingredients:
 Beef short ribs - 4
Oregano - 1T
Basil - 1T
Garlic, chopped - 1T
Flour - 1T
Dijon mustard - 2T
Beef stock - 4C

Onion, sliced - 1
Shallot, sliced - 3
Mushroom, halved - 8
Parsley, chopped - 1T
Salt & Pepper to taste

Potatoes, purple, red bliss, yellow wax - 1 each - halved
Carrot - 1 cut in 1 inch pieces

Garnish
Jalapino peppers (red and green)


 

 
Preparation:
 Cook the vegetables in oil
Coat the ribs with flour and spice
Braise the ribs with the vegetables
Add broth
Bake for 45 minutes
